Grapes: Garganega 100%
Growing area: The vineyards are located in the Classic Soave growing area, which includes the hills in the communes of Soave and Monteforte. The vines are planted in medium loose, gravel-clay soils of volcanic origin, at elevations of 100-350 metres.
Training system: Largely the traditional pergola Soavese method. Cluster thinning practised.
Harvest time: Last week of September; manually picked, with careful selection of the grapes.
Winemaking and maturation: Gentle pressing, gravity settling of the must, inoculation of selected yeasts, fermentation at controlled temperature (16-18°C); settling after fermentation and fining.
Appearance: Bright straw yellow
Bouquet: Fruity-floral fragrances with delicate hints of white fruits, in particular of apple.
Palate: harmonious, savoury, extremely elegant and pleasant, it marries a crisp acidity to a finish of pleasant bitter almond, classic to this wine type.
Serving suggestions: Ideal with entrees, lighter meats and fish dishes; particularly fine with sushi.
Best enjoyed at: 8-10 °C
